Pizza Ordered: Bufalina D.O.C. (Margherita)
Overall: Located in North Seattle, Cornuto Pizzeria is a solid Neapolitan pizza baker. The Cornuto pie hits on all key Neapolitan characteristics, and is a definite "go-to" for anyone wanting a top-notch Neapolitan pizza.
Crust: The Cornuto crust was light, delicate and thick around the edges. I would have preferred a bit more charring on the bottom of the crust, but there was enough present to detect the charred flavor, which is so important to the overall character of a Neapolitan pie.
Sauce: The sauce on the Cornuto pie was a crushed tomato (pomodoro) sauce. It was a slight bit saltier than I prefer, but that's a matter of taste. It wasn't applied too heavily, so the overall flavor blend was good.
Cheese: The cheese was a fresh Buffalo mozzarella with a wonderful, delicate flavor. It was applied evenly enough so it added character to every bite.
Topping(s): The pie was topped with an adequate amount of fresh, flavorful basil. Again, just enough to add to the overall flavor blend without dominating.
Atmosphere: The restaurant can be a bit loud, depending on where you are seated; however, they have a variety of seating options.
Service: Efficient and very friendly service. The Manager took time to talk to me about the pizzeria; something I always appreciate!
Utensils: Sturdy utensils and substantial napkins..
